Steamer Berry Swirl Cheesecake

Cheesecake in less than 10 min? Yes please! Use the Rectangular Steamer in your microwave to create a delicious 'baked' cheesecake in a fraction of the time of using a conventional oven, perfect for those hot summer months. 


Ingredients

Toppings (optional): fresh raspberries, crumbled gingersnaps, or graham crackers

Preparation
  1. In a 4-Cup Prep Bowl, whisk together cheesecake mix, cream cheese, Greek yogurt, and egg.
  2. Spoon into a lightly-oiled Rectangular Steamer.
  3. Cover; microwave on high until set, about 5-6 min. Refrigerate until cool completely, about 1 hr.
  4. Before serving, top with berries and crumbled gingersnaps, if desired. Slice and serve.
Tips

Prep ahead—cheesecake will keep well in fridge for up to 3 days. Garnish just before serving.

Make sure to let cream cheese completely come up to room temperature to ensure easy mixing. To quickly soften cream cheese, remove block from box and foil and place on a microwave-safe plate. Microwave on high for 15 seconds. 

Instead of whisking by hand, use a hand or stand mixer to easily combine ingredients.
